Batter Fried Sweet and Sour Shrimp
2 c flour
1/2 c cornstarch
1/4 c enriched white cornmeal
1/2 tsp baking powder
1 egg, slightly beaten
3 c water
1/2 c milk
46 lg shrimp, cleaned and shelled
Mix flour, cornstarch, cornmeal, baking powder, egg, water, and milk, but do not work or stir too much. Pour a small amount of batter at a time in a small bowl. Mix in plenty of shrimp at a time so that they are only lightly coated in batter. Have oil very hot, about 400F, and fry a few at a time until golden brown.
