Ten Flavor Shrimp

2 lbs deveined medium shrimp
1 1/2 tb Minced shallots or scallions
2 tb Brandy
1 1/2 teaspoon Freshly grated ginger or 1
2 tb Minced parsley
4 teaspoon Grated parmesan cheese
1 TB Butter
1 md Clove garlic, mashed
2 teaspoon Soy sauce
Teaspoon powdered ginger
4 teaspoon Fresh bread crumbs

Drain shrimp. Rinse under cold water and then soak for 10 - 15 minutesin cold water to remove preserving brine. Drain thoroughly and put on paper towels. Heat butter in skillet until it bubbles. Add shallots and garlic, and saute gently until golden. Add shrimp and toss for a minute or two to warm through. Mix in brandy, soy and ginger, along with parsley. Spoon the shrimp mixture into shells or ovenproof glass individual serving dishes, leaving any juice in pan.

Sprinkle each serving with bread crumbs and Parmesan cheese and then dribble pan juices over top. Heat under broiler until mixture is bubbling ane the crumbs are browned.

Makes 4 servings.
