Broccoli Souffle


2 packages Frozen broccoli; (10 oz each)
3 Eggs
Salt and pepper to taste
1 tablespoon Onion soup mix
1/2 cup Mayonaise
Grease for the pan
2 tablespoons Matzah meal, divided

Cook the broccoli according to package directions. Drain thoroughly. Set aside. In a mixing bowl, beat the eggs very well with the salt, pepper and onion soup mix; add the mayonaise and continue beating until well blended. Stir in the cooked broccoli. Grease a 7 x 11 1/2 inch baking pan. Dust lightly with 1 Tbls of the matzah meal. Pour broccoli in the pan and sprinkle the top with remaining matzah meal. Bake at 350 for 40-50 minutes, or until the top is golden.

Serves 4-6.
