Spinach Souffle


1 box frozen, chopped spinach, thawed
8 oz. small curd cottage cheese
2 oz. grated Parmesan cheese
1 large egg (or 2 small eggs)

Mix ingredients thoroughly. Place in greased baking dish. Bake at 350 degrees for 30 minutes; serve.

Spinach Souffle Squares

2 pkg. frozen chopped spinach, thawed and drained
6 slices white bread, cubed
1/2 cup cooking oil
1 cup milk
6 eggs, beaten
2/3 cup minced onion
2/3 cup Parmesan cheese
1 tsp. Italian seasoning
1 tsp. garlic powder
1/4 tsp. pepper

Mix all ingredients in a large bowl. Bake in a greased 9 x 13-inch baking dish at 325 degrees for 25 to 35 minutes. Cool slightly and cut into squares. Serve hot, cold or at room temperature.
