Blaukraut


1/2 kg washed red cabbage
40 g butter (optional)
1 peeled onion with 2 cloves stuck into it
1 teaspoon salt
1 tablespoon sugar
2-3 peppercorns
2 bay leaves
1 tablespoon vinegar
1 cup water
1 apple peeled, cored, and quartered
1/2 - 1 tablespoon flour (or cornstarch)

Wash the cabbage and dice relatively finely. Wash it again once it's been diced. Melt the butter in a large saucepan. Add the cabbage to the melted butter, along with all the other ingredients except the flour and apple. Cook until tender. Add the quartered apple. Cook until the apple is soft, about 10 minutes, mixing occasionally. Mix the flour or cornstarch with a little water and add to the boiling broth to thicken (it can be more or less thick to your personal taste). Cook again once the flour has been added for about 10 minutes. Taste and add more salt if necessary.
