Low Fat Italian Cabbage and Bean Soup


1 teaspoon olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup sliced carrot
1 garlic clove minced
1 1/2 cups shredded green cabbage
1 cup diced tomatoes with liquid
1 cup cooked white beans
2 packets instant onion broth and seasoning mix
1 tablespoon chopped parsley
freshly ground black pepper

Bring everything to a boil and let boil for 30 minutes or until veggies are done.

Makes 2 servings.
