Santa Fe Soup
Brown 2 pounds ground beef with two chopped onions
Drain off the fat
Then add:
2 packages of ranch dressing mix
2 packages of taco seasoning mix
Stir well.
Then add the following without draining off the juices:
1 can chopped tomatoes
1 can chopped tomatoes with green chilies (I use Rotel diced)
1 can pinto beans
1 can black beans
1 can kidney beans
2 cans shoe peg corn
2 cups water
Bring to boil, then reduce to simmer and cook uncovered for at least two hours
Top with sour cream, chopped green onion, and grated cheese... if you desire. You can scoop it out with tortilla chips, or sprinkle some crushed chips on top.
