Goat Cheese and Cognac Spread


1 cup (250ml) soft, fresh goat cheese
4 tsp (50ml) Courvoisier Cognac VSOP
1 tsp (5ml) brown sugar

In a small bowl, combine cognac and brown sugar. Stir to dissolve sugar and using a fork mash cognac into goat cheese. Line a small bowl with plastic wrap and spoon mixture into bowl. Fold the edges of wrap over cheese and gently press down to make it compact. Chill for at least 2 hours before serving. To serve, remove wrap from top of cheese. Invert bowl onto a small plate and peel off wrap. Surround cheese with slices of fresh apple, thinly sliced rustic bread, fine crackers and serve with flutes of chilled Freixenet Cordon Negro Sparkling Wine.
