Turkey Sabroso


leftover turkey, chunked (about 2 pounds)
1/4 cup freshly squeezed lemon juice
salt and pepper to taste
2 tbl olive oil
2 cups finely chopped onions
1 cup chopped bell peppers (red, green, yellow, or purple)
2 large garlic cloves, minced
1 tbl chili powder
1/2 tsp ground cumin
1 tsp cilantro
2 cups chopped, skinned plum tomatoes
2 tbl honey
black olives and parsley to taste

Marinade turkey in 1 tbl lemon juice, salt, and pepper. Sauté the rest of the ingredients until the onion is translucent. Reduce heat and simmer for 20 minutes. Add the turkey and simmer for 10 more minutes or until turkey is warmed through.
