Artichokes in the Constantinople Style
(Anginares a la Polita)
4 artichokes
juice of 2 lemons
1 large onion, thinly sliced
160 ml olive oil
4 carrots, sliced
6 teaspoons dill
350 ml water
250 gr. potatoes, peeled and sliced
salt and pepper
Prepare the artichokes. Heat the olive oil in a large 25 cm wide saucepan. Drop the onions in and sweat them a little, stirring. Add the carrots and the dill and keep stirring for 2-3 minutes on low heat. Add the water and the juice of 1 lemon and slowly bring to boil. Then add the potatoes and artichokes. The artichoke hearts should be almost covered with the liquid in the saucepan, so if needed add a little more water. Sprinkle in some salt and black pepper, cover and simmer slowly for 40 minutes, according to the size of the artichokes.
