Diabetic Sweet Potato Revenge


2 (16 oz.) cans sweet potatoes or yams, drained and mashed
1/2 cup orange juice concentrate
1/2 cup skim milk
1 tsp. vanilla
1 tsp. cinnamon
2 tablespoon chopped pecans

Preheat oven to 375 degrees. Spray an 11x7 baking dish with cooking spray. In a mixing bowl, combine all ingredients except pecans. Spread sweet potato mixture in prepared dish. Sprinkle pecans on top. Bake for 30 minutes.

Makes 8 (3/4 cup) servings

Exchanges (per serving): 169 calories, 2 starch; 3 g. fat, 18 mg sodium, 0 mg cholesterol.
