Louisiana Tomatoes and Okra


Vegetable cooking spray
1 tsp. vegetable oil
1 cup chopped onion
3/4 cup chopped green pepper
3 medium tomatoes, peeled and quartered
2 cups. sliced fresh okra
1/4 tsp. salt
1/4 tsp. pepper

Coat a large skillet with cooking spray; add oil. Sauté onion and pepper until tender. Add remaining ingredients; cover. Cook 5 minutes, stirring occasionally.

Makes 7 servings.
