Low Fat Mint Glazed Carrots and Snow Peas


Makes 4 servings

1 tablespoon low fat margarine
3 carrots, thinly sliced diagonally
1/2 pound snow peas, trimmed
2 tablespoons granulated sugar substitute, or 3 packets or 2 Tbl.. sugar
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh mint leaves

In a large non-stick skillet, sprayed with cooking spray over medium heat, sauté carrots 3 to 4 minutes in some broth or water. Add snow peas, sugar, lemon juice and mint; continue to sauté 1 to 2 more minutes until vegetables are glazed crisp-tender. Melt low fat margarine gently over very low flame stirring constantly, mix into vegetable mixture right before serving.

NOTE:
One teaspoon of dried mint may be substituted for fresh
