Low Fat Pakoris


Makes 8 servings

4 cups cauliflower, raw

The Batter:
2/3 cup garbanzo flour
1/3 cup soy flour
1/2 teaspoon herbal blend, commercial herbal salt substitutes
1/4 teaspoon baking soda
1/8 teaspoon yellow curry powder
1 teaspoon cumin ground
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1/4 teaspoon garam masala, or cardamom and cinnamon mixed together
3/4 cup water

Mix then Sift dry ingredients into a bowl. While stirring gradually add about 3/4 cup water to bowl and mix well. Let batter sit for about 15 minutes to an hour. Stir again before using, adding a TB or two of water if it is too thick.

Dip cauliflower into batter and spray surface lightly with cooking spray. Preheat oven to 350 deg and bake cauliflower till browned, about 15 minutes, turning until evenly cooked. Can serve with a fat free yogurt based dip.
