Low Fat Red Cabbage


Makes 8 servings

1/4 cup granulated sugar replacement, or 6 packets or 1/4 cup sugar
1 teaspoon whole cloves
1/2 cup cider vinegar
1 onion, chopped
1/2 cup water
1 head red cabbage, shredded

In a small saucepan, combine vinegar and cloves. Bring to a boil; reduce heat and simmer 6 minutes. Remove cloves. Add onion and water and simmer 5 more minutes. Stir in sugar substitute. Place shredded cabbage in a large saucepan and pour hot vinegar solution over cabbage. Cook until cabbage is hot and crisp-tender (5 to 6 minutes)
