Low Fat Stewed Green Beans


Makes 8 servings

2 1/2 pounds green beans
2 slices bacon, diced
1 onion, small, minced
1 1/2 cups fat free chicken broth
1 1/2 teaspoons salt
1/2 teaspoon finely ground black pepper
2 tablespoons fat free spread
2 tablespoons fresh tarragon, chopped

Snap the ends off the beans, wash and pat dry. Fry bacon until crisp. Drain off all but 1/2 tablespoon of the fat. Add the onion and cook until transparent. Add the beans and toss to coat with fat. Add the chicken broth, salt and pepper. bring to a boil, reduce heat, and simmer until done, about 6 or 7 minutes. Toss in the spread and tarragon. Arrange the beans on a platter, garnish with crumbled bacon and serve at once.
