Stuffed Onions

2 very large sweet onions
10 oz. chopped spinach, steamed and drained well
1/4 lb. bulk pork sausage
1/3 cups shredded cheddar
1/4 teaspoon salt
dash pepper
dash ground nutmeg
1/4 cups hot water

Cut each onion in half lengthwise. With a small knife, loosen the center of each to make a 1/2" thick shell. Dice the meat from the onion and set aside 1 tablespoonful (save the remainder for other dishes).

Brown the sausage with the diced onion. Drain fat and stir in remaining ingredients. Arrange onion shells, cut side up, in a glass baking dish. Pour hot water around the onions. Cover the dish with plastic wrap. Microwave on High for 5 minutes, rotating once.

Spoon equal amounts of the filling in the onion shells. Cover again and microwave on High 7-8 minutes, rotating the dish once or twice, or until the onion shells are tender. Let stand for 5 minutes before serving.
