Peanut Butter Stuffed Celery for 100

Portions: 2 stalks each
200 pieces (6 lb.) Celery, fresh, 2 to 3-inch pieces
Water, iced, To cover
2 cups (1 lb. 2 oz.) peanut butter
1 1/2 cups (1-1 lb. jar) honey
Place celery in water 1 hour or until crisp. Drain on sheet pans lined with waxed paper. Set aside.
Combine peanut butter and honey; blend thoroughly. Fill hollow section of each celery piece. Cover with waxed paper and refrigerate until ready to serve.
NOTE:
8 lb 4 oz fresh celery A.P. will yield 6 lb trimmed celery cut into 2 to 3-inch pieces.
