Coffee - Filter or Drip Method for 100

Servings: 100 Portions (6 1/2 Gallons)
Portions: 8 Ounces Each

3 1/8 quart (2 1/2 lb) coffee, roasted, ground
6 3/4 gallon water, briskly boiling

Place filter paper in dry basket carefully to avoid tearing. Pour coffee into
basket, spreading uniformly. Place basket in urn. Pour or siphon boiling water
over coffee. Cover; let water drip through completely. Remove basket
immediately. Draw off approximately 2 gallon of brew and pour back into urn to
mix to insure a uniform brew. Replace cover of urn; serve.

NOTE:
Hold finished coffee at 185 degrees F. for service.
Replenish water in outer jacket of urn whenever gauge shows less than hall full.
Empty coffee grounds. Wash basket and dry thoroughly for next use.
For 9 oz portions, use 2 3/4 lb coffee and 7 1/2 gallon water.
For 5 oz portions, use 1 1/2 lb coffee and 4 1/8 gallon water.
