Hot Cocoa for 100

Servings: 100 Portions (6 1/4 Gallons)
Portions: 8 Ounce Servings

1 quart Cocoa (1 lb)
1 1/2 teaspoon Salt
2 quart Sugar, granulated
1 1/2 quart Water, cold
3 3/4 quart Milk, nonfat, dry
5 1/4 gallon Water, warm
2 tablespoon Vanilla (optional)

Combine cocoa, salt, and sugar.
Add the 1 1/2 quart cold water and mix. Heat to boiling point; reduce heat and simmer 5 minutes.
Reconstitute milk with the 5 1/4 gallon warm water; add to cocoa syrup, stirring constantly. Add vanilla; mix until well blended.
Heat to just below boiling. DO NOT BOIL.
Serve hot.
