Hush Puppies for 100

Servings: 300 Hush Puppies
Portions: 3 each
Pan Size: Deep Fat Fry
Temperature: 360 degrees F.
3 1/2 quart (3 lb 8 oz) flour, wheat, general purpose, sifted
3 quart (3-24 oz pkg) (4 lb 8 oz)cornmeal
2 1/2 cups (12 oz) milk, nonfat, dry
3/4 cup (5 1/2 oz) baking powder
4 1/2 tablespoon (3 oz) salt
2 3/4 quart (5 lb 8 oz) water
1 1/2 quart (2 lb) onions, finely chopped
4 teaspoon black pepper
Place flour, cornmeal, milk, baking powder and salt in mixer bowl; blend thoroughly. Mix water onions and pepper; add to dry ingredients; stir to blend about 1 minute. Scrape down bowl. Drop batter by tablespoons into deep fat and fry about 3 minutes.
