Chocolate Peanut Butter Sauce for 100

Servings: 100 Portions (3 1/4 Quarts)
Portions: 2 Tablespoons Each
1 3/4 cups (8 oz) milk, nonfat, dry
1 1/2 quart water, warm
6 3/4 cups (3 lb) sugar, granulated
3 cups (12 oz) cocoa
1/4 teaspoon salt
2 cups water, cold
1 teaspoon vanilla
2 cups (2 oz) peanut butter
Reconstitute milk and warm water. Set aside. Mix sugar, cocoa, and salt with 2 cups cold
water to form a paste. Bring to a boil, stirring constantly; cool slightly. Add milk
stirring constantly. Bring to a boil; cook for 3 minutes. Remove from heat immediately.
Cool sauce. Add peanut butter to sauce; mix well.
NOTE:
Sauce may be served over ice cream, puddings, or plain cake squares.
