Egg and Water Wash for 100

Servings: 100 Portions (1 1/3 Cups)
2 tablespoon (1 oz) sugar (optional)
1/2 teaspoon cinnamon, ground (optional)
1 cup water
6 tablespoon (2 eggs) eggs, whole
Mix dry ingredients together. Add water. Add eggs and whip until thoroughly combined. Brush on rolls or pies before and during baking.
NOTE:
This wash will cover 13 to 17 pies.
