Strawberry Gelatin for 100

Servings: 100 Portions (3 Gallons)
Portions: 2/3 Cup Each
Pan Size: 12 by 20-inch Steam Table Pan
3-No. 2 1/2 can (4 lb 8 oz) strawberry dessert powder, gelatin
1 3/4 gallon water, boiling
7 1/2 quart (15 lb) strawberries, partially thawed
1/2 cup juice, lemon, fresh (optional)
Dissolve gelatin in boiling water. Add strawberries and juice; stir gently until fruit
thaws and separates. Pour about 1 1/2 gallon into each pan. Chill until firm.
NOTE:
12 oz lemons A.P. (3 lemons) will yield 1/2 cup juice.
