Pancakes for 100

13 lbs. of pancake mix will serve 100

1 1/2 gallon water
35 eggs
4 3/4 cup dry non fat powdered milk
9 lb flour
3/4 lb white sugar
2 cup shortening OR veg. oil
8 oz baking powder
4 1/2 tablespoon salt

Cook on a griddle temp. 375 deg.

Mix together dry ingredients, combining well to distribute evenly. Add eggs and water and mix at low speed just until blended. Don't mix excessively.

Blend in vegetable oil or melted shortening, mixing about 1 minute Using a 1/4 cup measure or ladle, pour onto lightly greased hot griddle. Cook until top is covered with bubbles and underside is browned, turn, cook on the other side. Total time 3-4 minutes.

2 pancakes per serving.
