Baked Ham with Peanut Butter for 100

Servings: 100 Portions
Portions: 2 Slices (4 Ounces)
Pan Size: 18 by 24-inch Roasting Pan
Temperature: 325 degrees F. Oven; 400 degrees F. Oven

30 lb. ham, cooked, boneless
3 1/2 cups (2 lb) peanut butter
1 tablespoon cinnamon, ground
1 1/2 teaspoon cloves, ground
1/2 cup (3 1/2 oz) sugar, granulated
3/4 cup (4 oz) cornstarch
1 cup (8 oz) butter or margarine
3/4 tablespoon salt
2 1/2 cups (1 lb) sugar, brown
1 quart water

Split casing and peel from ham; place ham in pans. Insert meat thermometer in a ham. Do
not add water, do not cover. Bake 2 hours or until meat thermometer registers 130
degrees F. Remove from oven. Combine peanut butter, cinnamon, cloves, granulated sugar,
cornstarch, butter or margarine, salt, brown sugar and water. Mix to form a smooth
paste. Pour peanut butter paste over hams. Bake at 400 degrees F. 30 minutes or until
meat thermometer registers 140 degrees F. Let stand 20 minutes before slicing.

NOTE:
Racks, if available, may be used.

If hams are frozen, cooking time will be increased about 1 hour.
