Baked Spanish Beef Patties for 100

Servings: 100 Portions (2 Pans)
Portions: 1 Pattie plus 1/3 cup Sauce
Pan Size: 18 by 24-inch Roasting Pan
Temperature: 325 degrees F. Oven

1 1/2 gallon (12 lb 12 oz or 2-No. 10 can) tomatoes, canned
2 1/4 cups (12 oz) onions, dry, chopped
3 cups (1 lb) peppers, sweet, fresh, chopped
1 cup (8 oz) shortening, meleted
1/2 cup (2 oz) flour, wheat, pastry, sifted
1/4 cup (2 oz) sugar, granulated
1/2 teaspoon chili powder
1 cup water
1 1/2 quart (2 lb or 2-16 oz can)
100 beef patties, Grilled Beef Burger recipe, prepared and cooked

Heat tomatoes to boiling; reduce heat. Keep at a simmer ; set aside. Saute onions and
peppers in shortening until soft. Stir in flour. Cook about 2 minutes. Dissolve sugar
and chili powder in water. Add tomatoes, and sugar-chili water to vegetable and flour
mixture. Stir until mixture reaches boiling temperature. Add mushrooms. Mix well. Place
a single layer of hamburgers in each pan. Pour 1 gallon sauce over hamburgers in each pan.
Cover pans. Bake 25 to 30 minutes.
