Boiled Crawfish (Lobster Tail) for 100

Servings: 1 Tail Each
100-8 oz tails (50 lb) Crawfish (Lobster tail), frozen
variable (to cover) water, boiling
4 tablespoon (per gallon of water) salt
3 bay leaves (optional)
Drop frozen tails in boiling salt water to cover tails (allow 4 teaspoon salt per gallon water).
Return water to a boil and simmer 15 minutes or until the tails turn a brilliant red or
bright orange. Drain. Slit underside of tail lengthwise and remove membrane. Serve with
drawn butter (approximately 3 tbsp) and lemon wedges and garnish with parsley sprigs.
