Servings: 100 Portions
Portions: 1 Fishwich each
Temperature: 350 degrees F. Deep Fat

25 lb. fish portions, frozen
1 3/4 quart 1/2-Tartar Sauce recipe, prepared
100 hamburger buns

Fry portions in deep fat (350 degrees F.) 3 minutes or until light brown. Do not
overcook or overbrown. Portions will rise to the surface when cooked. Drain well in
basket or on absorbent paper. Spread tartar sauce on each side of hamburger bun. Place
one portion of fish on each bottom half of the bun and close.

NOTE:
Do not thaw fish portions before baking or frying.

Portions should not touch while baking.
