Grilled Beefburger for 100

Servings: 100 Portions
Portions: 1 Burger Each
Temperature: 350 degrees F. Griddle

1 1/4 gallon (2 lb) bread, dry, broken
3 cups (water)
30 lb beef, ground, thawed
1 1/2 quart (2 lb) onions, dry, chopped
2 cups (10 eggs) eggs, whole, beaten
1/2 cup (5 oz) salt
1 tablespoon pepper, black

Moisten bread with water. Combine moistened bread, beef, onions, eggs, salt, and pepper.
Mix lightly but thoroughly. Avoid overmixing if using mixer. Shape injo patties 3/4 inch
thick, weighing 6 oz each. Grill 4 minutes or until brown. Turn and continue grilling 3
minutes on the other side.

NOTE:
2 lb 4 oz dry onions A.P. will yield 2 lb chopped onions.

if using beef pattie mix, bulk, reduce cooking time one minute per side.
