Pork Slices (Chops) With Apple Rings for 100

Portions: 1 Slice (4 Ounces)
Pan Size: 18 by 26-inch Sheet Pan
Temperature: 350 degrees F. Oven
100 5 oz. slices (32 lb) pork, slices, boneless, tempered
2 quart (1 lb 12 oz) flour, wheat, pastry, sifted
6 tablespoon (4 oz) salt
1 tablespoon pepper, black
2 tablespoon paprika, ground
4 teaspoon thyme, ground or oregano, ground
3 cups salad oil or bacon fat, melted
10 lb. apples, fresh, A.P.
2 3/4 cups (1 lb) sugar, brown
Core apples and slice crosswise in rings 1/2-inch thick (about 4 per apple). Add
seasonings to flour. Dredge slices in seasoned flour; shake. Brush tops of floured
slices with oil or bacon fat. Bake 30 minutes; remove from oven and place one apple ring
on reach slice; sprinkle with 1 teaspoon brown sugar and bake 30 minutes longer.
