Roast Pork for 100

Servings: 100 Portions (2 Pans Each)
Portions: 2 Slices (4 Ounces)
Pan Size: 18 by 24-inch Roasting Pan
Temperature: 325 degrees F. Oven

32 lb. pork loin, boneless
3/4 cup (8 oz) salt
4 tablespoon (1 oz) pepper, black

Rub pork with salt and pepper; place in pans. Insert meat thermometer in the center of
the thickest part of a roast. DO NOT ADD WATER. DO NOT COVER. Roast 2 to 4 hours,
depending on size of the roasts, or until the thermometer registers 170 0 degrees F. Let
stand 20 minutes before slicing.

NOTE:
47 lb pork loin, bladeless, may be used.

If roasts are frozen, cooking time will be increased 1 hour.

Remove netting before slicing.
