Sheperd's Pie for 48 or 240

This recipe is in metric. Many commercial recipes have the ingredients
 measured by weight, a scale is a good investment when making large recipes.

The first column serves 48,  the larger amount serves 240.

600 g 
25 ml
7 ml
5 ml 
Ground beef, lean 
Onions, chopped fine 
salt 
pepper 
garlic powder

3.0 kg
125 ml

25 ml
1.  Sauté beef with onions and seasonings (do not use fat) until cooked and all meat juice is evaporated. [cooked ground beef can be used, reduce amount quantity by 25%
300 g.

 

 

Flour

 

 

1.5 kg


2. Stir flour into meat; cook 5 minutes.
3. Place 3.2 kg beef mixture in each pan
2.4 kg Corn, Cream style canned (whole kernel corn can be used but it gives a drier product. 12.0 k 4. Spread 1.2 kg corn over beef mixture in each pan.
6.0 mashed potatoes 30 kg 5. spread 3.0 kg potatoes over corn in each pan
25 ml Paprika 125 ml 6. Sprinkle with paprika
7. Bake at 180 deg. C. for 35 min. or until golden brown.

Serving size, 300 g. (45 x 30 x 6cm steam table pans, cut 4 x 6)
