Spareribs and Sauerkraut for 100

Servings: 100 Portions (2 Pans)
Portions: 8 Ounces Each
Pan Size: 18 by 24-inch Roasting Pan
Temperature: 400 degrees F. Oven; 325 degrees F. Oven

75 lb. pork spareribs
6 tablespoon (4 oz) salt
1 tablespoon pepper, black
variable (as required) water
4-No. 10 can (24 lb 12 oz) sauerkraut, canned

Cut ribs into serving portions, 10 to 12 ounces. Overlap ribs in rows, fat side up, in
pans. Bake at 400 degrees F. for 30 minutes or until golden brown. Drain fat from pans.
Sprinkle salt, and pepper over ribs. Add water to cover bottom of each pan. Place
contents of 2-No. 10 can of sauerkraut in each pan. Cover pans. Bake at 325 degrees F. 1
1/2 to 2 hours.
