Steamship Round for 100

Temperature: 275 degrees F. Oven
45 to 55 lb Steamship Round Roast, whole round, beef
Appox. cooking time 6 hours.
Trim bottom of steamship to sit flat. Trim outer fat to 1/8-inch. leave a thin layer of
fat, helps the meat stay moist while cooking. Season outside of roast well.
Place a meat thermoter in the thickest part of the meat. Don't let the tip of the
themometer touch the bone.
Remove from the oven when thermometer read 130 degrees F.; set aside for at least 30
minutes. Temperature will continue to rise, reaching approximately 140 degrees F.
Cut with a carving knife. Cut parallel with the cutting board; thin slices against the
grain.
NOTE:
About 45 lbs per 100 servings.
