Barbecued Beef Sandwich for 100

Servings: 100 Portions (31/4 Gallons)
Portions: 1/2 Cup plus 1 Sandwich Bun

30 lb. beef, diced, thawed
1 1/4 quart (1 lb 12 oz) onions, dry, chopped
3 cups (1 lb) peppers, sweet fresh, chopped
1 3/4 quart (3 lb 12 oz or 2-No. 2 1/2 can) tomato paste, canned
1 tablespoon celery salt
2 tablespoon chili powder
1 teaspoon pepper, black
3 tablespoon (2 oz) salt
2 3/4 cups (1 lb) sugar, brown
1 cup vinegar
1/2 cup Worcestershire sauce
3 quart water
100 each (13 packages of eight) hamburger buns

Brown beef in its own fat in steam jacketed kettle or roasting pan. Drain or skim off
excess fat during cooking period. Combine onions, peppers, tomato paste, celery salt,
chili powder, pepper, salt, brown sugar, vinegar, Worcestershire sauce, and water; add
to beef and stir to mix well. Cover; simer 45 minutes; stir occassionally to prevent
burning. Serve on split toasted buns.

NOTE:
1/2 of recipe for "Hamburger Buns" recipe may be used in the place of hamburger
packages.
