Grilled Bacon, Egg, and Cheese Sandwich for 100

Servings: 100 Portions
Portions: 1 Sandwich Each
Temperature: 325 degrees F. Griddle
200 slices (6 lb 4 oz) bacon, cooked, crisp
100 eggs, whole
100 slices (6 lb 4 oz) cheese, American processed, sliced
100 hamburger buns
Grill or bake bacon slices according to their recipes "Bake Bacon Slices" or "Grilled
Bacon Slices" recipes. Set aside. Break one egg at a time into small bowl, pour onto
griddle; break yolk and place 2 slices of bacon on top of egg. Place 1 slice cheese on
top of ham. Continue to cook until cheese melts. Serve on split buns.
