Ham and Cheese Salad Sandwiches for 100

Servings: 100 Portions
Portions: 1 Sandwich Each

7 1/2 quart (10 lb) ham, cooked, finely chopped
24 eggs, hard cooked finely chopped
2 1/4 quart (3 lb) cheddar or Swiss cheese, processed, shredded
1 quart (1 lb 8 oz) pickles, cucumber, sweet, chopped
1 quart (2 lb) Salad Dressing
200 slices (12 lb) bread
1 quart (2 lb) butter or margarine, softened
4 lb. lettuce, fresh, trimmed (optional)

Combine ham, cheese, eggs, pickles and salad dressing; mix together lightly. Spread 1
slice buttered bread with 1/4 cup filling; top with lettuce and second slice of buttered
bread.

NOTE:
Other variations in sandwich spread may be used.

14 lb 12 oz smoked ham or 12 lb 8 oz canned ham will yield about 10 lb cooked ham.
