Hot Roast Pork Sandwich (Pork Loin) for 100

Servings: 100 Portions
Portions: 1 Sandwich Each

18 lb 12 oz. pork loin, boneless, cooked
200 slices (12 lb) bread
3 1/8 gallon 1 2/3 Brown Gravy recipe, prepared, hot

Cut pork in thin slices, 16 to 24 slices per pound. Place 3 to 4 slices pork on one
slice of bread. Top with second slice of bread. Prepare 1 2/3 recipe for Brown Gravy
recipe using pork drippings. Pour 1/2 cup hot gravy over sandwich. Serve immediately.

NOTE:
29 lb 4 oz boneless pork loin will yield about 18 lb 12 oz cooked pork. See "Roast Pork"
recipe for cooking directions.
