Italian Veal Cutlet Submarine Sandwich for 100

Portions: 1 Sandwich Each
1 gallon Pizza Sauce, prepared
100 each (34 lb 6 oz) veal, steaks, breaded, frozen
100 each (25 lb) Rolls, French
6 1/4 cups (1 lb 8 oz) cheese, pizza blend
Prepare "Pizza Sauce" recipe; set aside. Fry steaks 5 to 7 minutes or until lightly
browned. Cool slightly; cut each steak in half diagonally. Split French rolls almost
through. Spread 1 oz (2 tablespoon - 1 -AA ladle) sauce on bottom half of each roll. Add 2
steak halves; ladle 2 oz (1/4 cup - 1 A ladle) sauce over steak halves. Sprinkle about 1
tablespoon cheese over each sandwich; close top. Serve immediately.
