Oven Reuben Sandwich for 100

Servings: 100 Portions
Portions: 1 Sandwich Each
Pan Size: 18 by 26-inches Sheet Pan
Temperature: 450 degrees F. Oven

16 lb beef, corned, cooked
2 quart (4 lb 2 oz) Thousand Island Dressing 1/2 recipe, prepared
200 slices (12 lb) bread, rye
3 quart (6 lb 3 oz or 1-No. 10 can) sauerkraut, drained
100 slices (6 lb 4 oz) cheese, Swiss, sliced
1 quart (2 lb) butter or margarine, melted

Cut corned beef in thin slices 19 to 25 per pound. Prepare 1/2 recipe for Thousand
Island Dressing recipe. Spread each slice of bread with Thousand Island Dressing. Place
3 to 4 slices of corned beef on 1 slice bread; top with 2 tablespoon sauerkraut and 1 slice
cheese. Top with second slice of bread. Arrange sandwiches on sheet pans. Brush outside
of sandwich with melted butter or margarine and toast in a 450 degrees F. oven 10
minutes or until lightly browned.

NOTE:
24 lb corned beef will yield about 16 lb cooked corned beef.

2 quart prepared Thousand Island dressing may be used.
