Tuna Salad and Cheese Sandwich for 100

Servings: 100 Portions
Portions: 1 Sandwich Each
Temperature: 400 degrees F. Griddle

1 gallon (8 lb or 2-4 lb can) tuna, canned
3 cups (1 lb) onions, dry, chopped
3 cups (1 lb) celery, fresh, chopped
2 cups (1 lb) relish, pickle, sweet, drained (optional)
1 cup juice, lemon
1 quart (2 lb) Salad Dressing
200 slices (12 lb) bread
1 quart (2 lb) butter or margarine, softened
100 slices (6 lb 4 oz) cheese, sliced

Drain and flake tuna. Combine tuna, onions, celery, relish, lemon juice, and Salad
Dressing. Mix together lightly. Melt butter or margarine; brush top and bottom of
sandwiches and grill on a 400 degrees F. griddle until bread is golden brown on each
side and cheese is melted. Serve immediately

NOTE:
10-12 1/2 oz or 13 oz can canned tuna may be used.

1 lb 4 oz dry onions A.P. will yield 1 lb chopped onions.

1 lb 5 oz fresh celery A.P. will yield 1 lb chopped celery.

1 lb 8 oz fresh lemons A.P. (6 lemons) will yield 1 cup lemon juice.

5 lb 8 oz fresh lettuce will yield 4 lb trimmed lettuce.
