Baked Potatoes II for 100

Servings: 100 Portions (2 Pans)
Portions: 1 Potato Each
Pan Size: 18 by 26-inch Sheet Pan
Temperature: 400 degrees F. Oven

100 each (55 lb) potatoes, white, fresh, medium size, baking type A.P.
2 cups (1 lb) shortening, melted or meat drippings

Select medium sized potatoes. Scrub potatoes thoroughly; remove any blemishes. Brush or
rub potatoes with fat; place on sheet pans. Bake 1 hour or until done. Prick skin with a
fork to allow steam to escape.

NOTE:
If desired, tops of baked potatoes may be slit lengthwise and crosswise and opened
slightly. Place 1 pat of butter in each potato and garnish with minced parsley or ground
paprika.
